Tasty little bites of energy!I'd been wanting to try making energy bites for a while...I'd seen a ton of different recipes for them on Pinterest. I found this recipe that was a little bit different...Trail Mix Energy Bites. My husband loves trail mix so I decided to try these! They turned out great! They're pretty simple, quick, and fun to make. I found the recipe from "Gimme Some Oven"...you can find their website here. I made a few small changes to their original recipe...Here's what I made below. Enjoy! Ingredients 1 cup old fashioned oats 1/2 cup creamy peanut butter 1/2 cup mini semisweet chocolate chips (or dark chocolate) 1/2 cup peanuts (you can use almonds instead) 1/2 cup chopped pretzels (I just snapped them into tiny pieces) 1/3 cup honey 1/3 cup dried cranberries (you can use raisins instead) 1/4 cup wheat germ 1 Tbsp. chia seeds 1 Tbsp. golden flax seeds (I added this) Stir all ingredients together in a large bowl until evenly mixed. Cover and refrigerate for 1-2 hours. Remove from refrigerator and shape into small 1 to 1.5-inch balls. Note: it helps a lot to rinse off your hands about halfway through...when they are covered in the mix it's harder to shape into the balls. Serve immediately or refrigerate. They last in a sealed container in the refrigerator for up to 2 weeks! My batch made around 25 energy bites.
