Recipe for a quick & easy, fresh, healthy burrito bowlThis is a great and really quick dinner recipe I found from POPSUGAR Fitness…I tried it the other night and it turned out to be delicious! If you're looking for an easy dinner but trying to keep it low-calorie, this is a good one! Here's the recipe with a few of my changes: Ingredients 1/4 cup black beans (drained/rinsed if from a can) 1 tsp chicken broth Pinch of cumin (I omitted this) Pinch of cayenne (I omitted this) Pinch of oregano Pinch of garlic powder 1/2 cup red cabbage, sliced thin (I used shredded lettuce instead) 3 oz precooked grilled chicken breast, sliced thin 2 Tbsp nonfat plain Greek yogurt (this is used instead of sour cream) 2 Tbsp fresh salsa Fresh cilantro, for garnish (I used dried cilantro, but fresh would probably be better) Sliced green onions, for garnish (I used a small shake of minced onions) Directions
Microwave black beans with chicken broth, oregano, cumin, cayenne, and garlic powder (or just the oregano and garlic powder) on high for 30-45 seconds until heated and set aside. Add red cabbage (or shredded lettuce) to your bowl. Spoon black beans on top. Layer the sliced chicken, Greek yogurt, salsa, cilantro, and green onions. Serve immediately. *This recipe is easy to double…you just make it by the bowl. One bowl has 350 calories. Enjoy!
