Perfect for a Dinner Party!I made this icebox cake this week for a dinner party with friends (my last post). I found the recipe on Pinterest from a blog called South Your Mouth! southyourmouth.com It was a fairly simple dessert to make…and it turned out super yummy! I cut the original recipe in half (it makes a whole 9x13 pan, and I only needed to make a 9x9 pan). Here's the full recipe: Ingredients
2 lbs fresh strawberries 2 sleeves of graham crackers (I used more than the recipe called for to add more layers to the cake) 1 8oz. package cream cheese, softened 1 14oz. can sweetened condensed milk 2 3.4oz. packages instant cheesecake flavored pudding 3 cups milk 1 12oz. carton Cool Whip, divided Directions Clean and slice strawberries, and set aside. Line bottom of 9x13 dish with graham crackers (you'll have to break some up to fit), and set aside. Beat cream cheese and sweetened condensed milk in large bowl with electric mixer until smooth. Add pudding mixes and milk and continue mixing on low for 4-5 minutes, until it starts to thicken. Fold in 2 cups Cool Whip until mixture is smooth. Pour half (I did a third) of cream cheese mixture over graham crackers and arrange a layer of strawberry slices over the mixture. Top strawberries with another layer of graham crackers, and repeat the layering (I did 3 layers instead of 2 so it would have more strawberries and layers in the cake). Top final cream cheese layer with another layer of strawberries. Cover and refrigerate for 6-8 hours. When you are ready to serve the dessert, top with the remaining Cool Whip and crush remaining graham crackers to sprinkle the crumbs over Cool whip. Enjoy! :)
