Decorate your own cookie cake!
One of my husband's favorite things is cookie cakes. We found them on sale at Harris Teeter the other day and decided to buy a plain one and I would decorate it at home. It turned out to be really fun…a neat way to put a twist on something simple. You can decorate them so many ways…I just used some light pink icing that came in a dispenser with different icing tips to try, and I used some chocolate candied green pearls!
I decorated a table to celebrate Mother's Day using fresh cut knockout roses from outside and baby's breath I found at the store! I wanted to do a fun, pretty, and elegant table…I used green fabric as the tablecloth for a pop of bright color, and light pink fabric squares on top to soften it. Then I stacked these cute white beaded cake plates, with the white ceramic pineapple from my April Favorites on top…to make a simple and sophisticated centerpiece! I used silver chargers with a white napkin and white saucer and teacup at each place setting. Underneath each napkin, I placed a strip of wired light pink ribbon, curling it around the edges of the charger for another pop of color. I placed a few roses in each of the teacups, with a strand of pearls coming out of the teacup as well. On either side of the cake plates, I placed mercury glass candle holders and mini lanterns left from our wedding decor and filled them with the flowers. I also added fancy iced beverage glasses to add a little sparkle to the table. This was a really fun little table setting and could easily be used for lots of other occasions besides Mother's Day too! This is just an example that you can just use things around the house (and flowers growing outside!) to create a fun and fancy table to brighten up a special occasion!
A light, sweet, summertime dessert
Strawberry Punch Bowl Cake is a great summertime dessert to make for a big crowd. It's a classic and is unique because you make it in a large, pretty punch bowl! I made it yesterday for a graduation party. It's a light dessert and is always delicious! It's also fairly simple to make. Here's the recipe!
1 large (round) angel food cake
1 small (loaf size) angel food cake
2/3 cup can evaporated milk
1 cup sour cream
1/4 cup powdered sugar
2 cartons Cool Whip
1 can strawberry pie filling
1 package strawberry glaze
1 package fresh strawberries
Pour and spread second carton of Cool Whip over cake in the punch bowl. Spread strawberry glaze then spread strawberry pie filling over top. Wash and slice fresh strawberries and arrange them to cover the top of the cake. I added a whole strawberry in the middle for garnish.
Tear up all of angel food cake into chunks and put in the bottom of the punch bowl. In another bowl, mix evaporated milk, sour cream, powdered sugar, and 1 carton of Cool Whip. Mix well and pour over the cake in the punch bowl. Mix in well so that all of the pieces of angel food cake are coated.
Cover and chill in fridge until time to serve. Enjoy! :)
Shopping in West Jefferson, NC
We spent the weekend in the mountains and spent one day in downtown West Jefferson, NC. It's so pretty right in the mountains and has several cute shops and boutiques! Here are some of the cool things I found shopping that I would recommend!
Pretty 'n Pearls: This is a shop that has bridal/prom attire, but also much more! They carry some great clothes and jewelry…and Jack Rogers! This is where I found this outfit… the sea foam colored top with a criss-cross back and lace on the arms, and blue palazzo pants that are SO comfy and cute! I also found my white Jack Rogers sandals (they have a good selection) and my John Wind initial bracelet here. The John Wind jewelry is really nice and becoming more and more popular. The coolest part about the bracelet is that the big pearl is made out of cotton! It doesn't get much more Southern than cotton and pearls! :)//Find their website here
Petal Pusher Designs: This is a really neat little shop with lots of home decor, etc. This pack of drizzle melts is from here…they're perfect to put in a tart warmer or Scentsy. From the Swan Creek Candle Co., these are made of natural American soybean wax and they have several different scents. This one is Roasted Espresso and smells awesome…just like walking into a coffee shop!//More on the store here//Swan Creek Candle Co. website
The Honey Hole: This is a cute, unique shop…it has an observation colony where you can actually see live bees working through the glass! It features honey and some really neat honey and bee-themed gifts, including several homemade soaps. I found this "Honey & Grits" homemade soap here. It smells good and the grits in it work to exfoliate!//Find their website here
If you're ever near West Jefferson, NC you should try out these cute shops and more…or look them up online!

Recipe for a quick & easy, fresh, healthy burrito bowl
This is a great and really quick dinner recipe I found from POPSUGAR Fitness…I tried it the other night and it turned out to be delicious! If you're looking for an easy dinner but trying to keep it low-calorie, this is a good one! Here's the recipe with a few of my changes:
1/4 cup black beans (drained/rinsed if from a can)
1 tsp chicken broth
Pinch of cumin (I omitted this)
Pinch of cayenne (I omitted this)
Pinch of oregano
Pinch of garlic powder
1/2 cup red cabbage, sliced thin (I used shredded lettuce instead)
3 oz precooked grilled chicken breast, sliced thin
2 Tbsp nonfat plain Greek yogurt (this is used instead of sour cream)
2 Tbsp fresh salsa
Fresh cilantro, for garnish (I used dried cilantro, but fresh would probably be better)
Sliced green onions, for garnish (I used a small shake of minced onions)
Microwave black beans with chicken broth, oregano, cumin, cayenne, and garlic powder (or just the oregano and garlic powder) on high for 30-45 seconds until heated and set aside.
Add red cabbage (or shredded lettuce) to your bowl. Spoon black beans on top. Layer the sliced chicken, Greek yogurt, salsa, cilantro, and green onions. Serve immediately.
*This recipe is easy to double…you just make it by the bowl. One bowl has 350 calories.
